We were crazy busy last week with all your bank holiday orders (THANK YOU), which means we're posting this a little later than anticipated. Nevertheless, we found some time over to the weekend to get creative in the kitchen and put together this weeks super easy "pairing of the week", and trust us, it's good'un!
Whipped Ricotta with Black Cherry Jam
Ingredients (serves 4)
1-2 tbsp Whole Milk
Zest of a Lemon
A Pinch of Salt
Cherry Jam (we used Tiptree's Black Cherry)
Optional extra: Mint
Empty the ricotta into a mixing bowl and add the milk.
Using a metal whisk, whip the ingredients up into a thick and creamy consistency - this should take approx 1 minute.
Zest the lemon into the bowl and whisk into the mixture along with a pinch of salt.
Place in the fridge and leave to chill for 20 minutes.
When ready to serve, slice your sourdough bread into thick, doorstop slices and toast.
Spread the ricotta mixture generously onto the toast and spoon over the jam. Serve as is, or add chopped mint for extra flavour.
This recipe is delicious for something a bit different to your usual butter or jam on toast for breakfast, or as a snack in the afternoon with a nice cup of tea or coffee! We used Tiptree black cherry jam, as this in one of our favourites, but you could definitely swap this out for another flavour of jam - a blackberry or blackcurrant alternative would work well!
